Tomato Rice with Green Onions
Ingredients
  • 1 cup basmati rice
  • 1 tablespoon oil
  • 1 tablespoon butter
  • 1 bay leaf
  • 3 to 4 slivers cinnamon stick
  • 1/2 teaspoon cumin seeds
  • 1/2 cup onion, cut lenghtwise
  • 1/2 cup chopped tomato
  • 1/4 teaspoon turmeric powder
  • 1/2 cup tomato sauce
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon salt
  • 1/2 cup chopped green onion tops
  • 1/2 cup roasted cashews

Directions
  1. Cook rice in 2 cups of water in a rice cooker or covered saucepan over low heat. Set aside to cool for about 10 minutes.
  2. Place oil and butter in a wide-bottomed skillet and heat over medium heat.
  3. When oil is hot, but not smoking, add bay leaf, cinnamon sticks, and cumin seeds. Fry until cumin seeds are golden.
  4. Add onion, tomato and sauté for a few minutes.
  5. Add turmeric powder, tomato sauce, and garam masala. Stir well and reduce heat to low. Continue cooking uncovered.
  6. Add salt and mix well with ingredients in wok.
  7. Add rice and fluff rice to above mixture.
  8. Add green onions to rice and stir gently.
  9. Add cashew nuts and stir well.
