Tomato Rice with Green Onions

- 1 cup basmati rice
- 1 tablespoon oil
- 1 tablespoon butter
- 1 bay leaf
- 3 to 4 slivers cinnamon stick
- 1/2 teaspoon cumin seeds
- 1/2 cup onion, cut lenghtwise
- 1/2 cup chopped tomato
- 1/4 teaspoon turmeric powder
- 1/2 cup tomato sauce
- 1/2 teaspoon garam masala
- 1/2 teaspoon salt
- 1/2 cup chopped green onion tops
- 1/2 cup roasted cashews
Directions
- Cook rice in 2 cups of water in a rice cooker or covered saucepan over low heat. Set aside to cool for about 10 minutes.
- Place oil and butter in a wide-bottomed skillet and heat over medium heat.
- When oil is hot, but not smoking, add bay leaf, cinnamon sticks, and cumin seeds. Fry until cumin seeds are golden.
- Add onion, tomato and sauté for a few minutes.
- Add turmeric powder, tomato sauce, and garam masala. Stir well and reduce heat to low. Continue cooking uncovered.
- Add salt and mix well with ingredients in wok.
- Add rice and fluff rice to above mixture.
- Add green onions to rice and stir gently.
- Add cashew nuts and stir well.
