Roasted Brussels Sprouts

- 1 tablespoon oil (more, if desired)
- 1/4 teaspoon ground cumin
- 3/4 teaspoon garam masala
- 1/8 teaspoon salt
- 4 cups (1 pound) brussels sprouts, cut in half
Directions
- Preheat oven to 425 F.
- In large bowl combine oil, cumin, garam masala, and salt.
- Add brussels sprouts and toss until spices and oil are evenly distributed.
- Place brussels sprouts cut side down in a single layer on a dark, shallow baking sheet. (Do not use a light-colored pan or aluminum foil because they do not allow vegetables to brown as quickly.)
- Place in oven and roast about 15 minutes. Check if they are starting to brown on bottom. If not, return to oven for 5 minutes. (Bake until as soft as you like. This will vary based on your individual oven.) Serve immediately.
