Roasted Brussels Sprouts
Ingredients
  • 1 tablespoon oil (more, if desired)
  • 1/4 teaspoon ground cumin
  • 3/4 teaspoon garam masala
  • 1/8 teaspoon salt
  • 4 cups (1 pound) brussels sprouts, cut in half

Directions
  1. Preheat oven to 425 F.
  2. In large bowl combine oil, cumin, garam masala, and salt.
  3. Add brussels sprouts and toss until spices and oil are evenly distributed.
  4. Place brussels sprouts cut side down in a single layer on a dark, shallow baking sheet. (Do not use a light-colored pan or aluminum foil because they do not allow vegetables to brown as quickly.)
  5. Place in oven and roast about 15 minutes. Check if they are starting to brown on bottom. If not, return to oven for 5 minutes. (Bake until as soft as you like. This will vary based on your individual oven.) Serve immediately.
