Outdoor Wisconsin ends its' 34th season at the UW-Waukesha field station with students working to preserve the land's native plants and animals - which took one man and many volunteers over fifty years to bring back to Wisconsin. And Mark Nissen, of Classic Bird Hunts, guides Dan Small on a grouse and woodcock hunt in Ashland County, then prepares a wild game birthday lunch at Clam Lake Lodge.
Classic Bird Hunts
4 cups crappie filets
2 cups chopped shrimp
1 cup bread crumbs
3 tablespoons un-salted butter
1/2 teaspoon salt
Herbs to taste, lemon-pepper, dill, chives, cilantro all
Chop filets, shrimp, salt and herbs of choice in food processor being careful not to over chop. Texture is important, result should be chunky but not pasty.
Empty food processor into mixing bowl and hand mix bread crumbs and egg into medium sized patties.
Add butter to skillet and heat over medium heat. When butter is hot (and before turning brown) and cakes and cook until brown on bottom (a couple of minutes). Flip and brown other side.
Can be served with favorite sauce.
